easy vegan salad

As you’ve probably guessed it, this is another vegan blog, but I promise you won’t find any snobbery here. This is a non-judgmental zone. So whether you are a meat-eater, a vegetarian, or vegan, you are welcome here. You’ll find healthy plant-based (vegan) recipes that are easy to make, taste good, and are relatively cheap. To start out with, below is a simple recipe for an easy vegan salad that’s simple, affordable, and tastes good!



My dad and I make this for lunch together now every other day.


To make this easy vegan salad you’ll need:


  • 1 handful of iceberg lettuce mix
  • 2 handfuls precut cabbage mix
  • 3 handfuls of spinach
  • 2 avocados, halved and scooped
  • 1 Red bell pepper, diced
  • Half a cucumber, diced
  • 1 jalapeño, diced (optional)
  • Half of a red onion, chopped
  •  1 box cherry or grape tomatoes

Recipe Instructions:

Toss everything together in a large bowl and then separate into smaller bowls, for serving, and add any dressing you like, or make your own, but we tend to use Newman’s Own Organic Olive Oil and Vinegar or Balsamic Vinegar. For an added nutritional benefit, you can add Tahini, which is basically sesame seed paste, and other toppings, like pickled peppers, croutons, and even dried cranberries! Garnish with sea salt and fresh ground black pepper and enjoy!


Overall, this easy vegan salad is quick and simple to make, costs very little, and is nutritionally sound. The great thing about a salad like this is that you’ll feel full without feeling sluggish. There will likely be leftovers – especially if you didn’t share this with someone! For those looking to pair this with something else, I suggest a nice bowl of soup with croutons.
